This excellent coffee comes from COCAPEC, a cooperative known for its natural drying methods. It's a decaffeinated coffee bean from the Mogiana region of Brazil––an area along the borders of Sao Paulo and Minas Gerais. The cooperative works in partnership with its members to guarantee consistent coffee quality. This coffee is dried in the sun and in a mechanical dryer to ensure the moisture evaporates. It then goes through a unique decaffeination process.

The Mountain Water Process is a chemical-free technique for making decaf coffee. It originated in Mexico and uses water from a mountain called Pico de Orizaba.

The green coffee beans are either steamed or soaked in hot water to expand the coffee’s pores, making the caffeine more easily extractable. From there, the beans are soaked in water and a proprietary blend of coffee solids, which, over time removes the caffeine while leaving the original flavor oils intact. That water is then moved to a separate tank and the caffeine is filtered out.
